Molecular Formula | Na5P3O10·6H2O |
Physical and Chemical Properties | Chemical properties White cubic column crystal or crystalline powder. Dissolved in water, the aqueous solution is alkaline. The Ph value of 1% aqueous solution is about 9.5. At 80 ℃, sodium tripolyphosphate hexahydrate is stable, but it is dehydrated and decomposed to generate sodium dihydrogen phosphate and sodium pyrophosphate at 85~120 ℃, and then re-synthesized sodium tripolyphosphate at 120 ℃. |
Use | It is suitable for canned food, fruit juice beverage, dairy products, soybean milk and other quality improvers. It is mainly used for tenderization of canned ham and softening of bean skin in canned broad beans. It can also be used as a softener and thickener. |
Recrystallization method dissolves industrial-grade sodium tripolyphosphate in an organic solvent to form a saturated solution, adds decoloring agent, heavy metal remover, and arsenic remover. After purification and filtration, cooling crystallization or isothermal crystallization is carried out. After centrifuging the mother liquor, the crystallization is dried to produce edible sodium tripolyphosphate.
